David’s Chicken Apple Sausage One-Dish Meal

 Here's a favorite recipe that I made up, wanting to do something special with chicken apple sausage. The best part is, you make the whole thing in one large frying pan. I use my 12-inch electric frying pan, but you can use any large pan you have. The thing I like about using the electric frying pan is the even cooking over the entire surface. The flavors of the ingredients of this dish are amazing when they are melded all together.
David’s Chicken Apple Sausage One-Dish Meal
1 package of Chicken Apple Sausage
1 onion sliced
3 - 4 carrots chopped
1 tablsp dried oregano
salt and pepper to taste
1 1/2 cup golden raisins soaked in dry sherry
2 fuji apples chopped
dry sherry
egg noodles
chicken stock
pepper
cut sausage into 1 inch pieces and brown in olive oil in a 12-inch pan. Remove from pan. In same pan, sauté the onion and carrot until onion is golden. Add the oregano, salt and pepper while you are sauteing the onion and carrot. Add the raisins and their sherry, the browned sausage and add about a cup of additional dry sherry and let it cook down to deglaze the pan. Add about 21/2 cups of egg noodles and two cups of chicken stock.  Get the noodles submerged in the stock and cover the pan. Heat until the noodles are cooked. Remove lid and if there is a bit too much liquid, let it cook down until it is the consistency you desire.
